What do you get when you mix peanut butter, peanut butter chips, salted peanuts and marshmallows (with a little melted butter)? You get the perfect summer no-bake dessert! I was hankering for something peanutty and sweet but I didn’t want to turn on the oven. Problem solved. I mixed up a small slice of peanut heaven.
For some people the best part of this one pot, gluten-free treat may be the contrast between salty and sweet. For others it might be the pillowy marshmallows speckled throughout, juxtaposed with the crunchy nuts. There even might be some eaters who just love the pure delicious taste of peanut butter.
I prefer to use Jif creamy peanut butter for this recipe. To be honest, I have not tried it with natural peanut butter, but I think that the good old supermarket kind will work best. You see there is no sugar added to the mixture. The sweetness comes from the sugar in the chips and the sugar in the peanut butter itself. Go for gold and use the Jif!
1/2 cup (1 stick) butter, unsalted
I cup peanut butter, creamy
1 bag (10 ounces) peanut butter chips
3 cups peanuts, salted
10 ounces ( 1 bag) mini marshmallows
Spray a 9 x 9 inch baking pan with cooking spray. Alternatively, you can line the pan with parchment paper.
In a large pot, over medium low heat, melt the butter, peanut butter and peanut butter chips. Stir frequently until completely melted and smooth.
Remove the pan from the heat and stir in the peanuts and marshmallows. Fold them into the mixture until they are completely coated.
Pour the mixture into the prepared pan and spread evenly.
Cool completely before cutting. You can even put the pan into the refrigerator to speed up the cooling process. When cool, cut into squares and try not to eat them all in one sitting!
